Apple Clafoutis


A great low-sugar treat.


Special days — like Valantines Day — make me want to cook something special for every meal.


And this is perfect for a breakfast treat.

Apple Clafoutis (serves 8)
4 large eggs
1/2 cup plus 2 tablespoons sugar (or 12 packets of sugar substitute)
Pinch of salt
1/2cup all-purpose flour
1 1/4 cups whole milk
1 teaspoon vanilla extract
1 apple, peeled and cored
1 cup raisins
1 tablespoon unsalted butter plus more for baking dish
Confectioners’ sugar

Preheat over ti 400° F. Butter a 10-inch tart dish or a 9 1/2-inch pie plate.

In a bowl, combine eggs, 1/2 cup sugar (or 10 packets of the substitute), and salt until well mixed. Whisk in flour, milk and vanilla.

Butter bottom of baking dish.

Cut apple into thin slices and arrange in bottom of baking dish in concentric circles.

Gently pour egg mixture over apple slices. Scatter raisins over top of apple & batter. Cut butter into small bits and sprinkle on top of apple, raisins and batter. Sprinkle 2 tablespoons sugar over top!

Place dish onto a baking sheet and bake until puffed and golden brown around edges, 25-30 minutes.

Cool on rack. Don’t panic—This will deflate! When cool sprinkle with powdered sugar. To serve, cut into pie wedges. Can be served at room temperature or chilled. Store in refrigerator. Serves 8.
